Your address is where the pool pays you, so it must be one you can spend from. Shares are weighted over a PPLNS window: mine longer, earn a steadier share. Rewards are coinbase outputs, so a block is only credited once the chain has buried it — that wait is the maturing figure above.
Either kind of address works. Give a ring address and you are paid as a ring output; give a shielded address and you are paid as a note in the Orchard pool. Both are private — the choice is which anonymity protocol your payout lands in, not whether it is private. The one thing a shielded payout makes public is the amount crossing into the pool, and only while the pool's own rewards are still ring outputs.
Every block this pool finds pays here first, then the whole reward is split out to miners. With a 0% fee nothing is kept.
